10 Things to love about our Waco Stay

10. Free Pecans

pecans-2 pecans-1

While being parked under a mature pecan tree did account for some noisy nights when the wind was blowing, it also enabled us to collect a fair number of pecans! We only collected about twice as much as you see here because after all, we don’t have a lot of storage space. But since there always seemed to be several local folks collecting in the general area, we felt good leaving plenty for them.

9. Lake Waco – Midway Park
We have NEVER, EVER stayed in a campground for 7 weeks. Never. Midway is a Corp. of Engineers park which means that (a) the sites are usually in close proximity to a body of water (Lake Waco), (b) reasonably priced (c) and available for two weeks at a time. This time (we’ve stayed here several times before),(a) while we weren’t “on the water”, we did have a view of the water plus we had a full hookup :), (b) since Gary turned 62 we’ve taken advantage of the Golden Access Pass, which gives us ½ price camping at COE campgrounds – as in $12.00/night – and (c) due to the fact that it was off season, we were able to stay the entire 7 weeks with only have to change spots (to right next door) once!

8. A Busy Gary is a Happy Gary

Before we arrived in Waco we asked Lara if any of her friends had any work for Gary. You know, kind of a “Hire Lara’s Dad” scenario. Turns out that several of them did have some handyman jobs for “Pops”, so he kept busy installing outdoor lighting, removing gutters, cutting down a tree, installing a garbage disposal, repairing ductwork and drain in an attic, fixing a bathroom exhaust fan, fixing a pool room door, installing a set of (creative) interior sliding doors, and repairing a heat pump.

The extra money that he made paid for the campground and really helped with outfitting No. 6. 🙂

7. A Busy Dad is a Happy Dad
At Lara’s house he was able to replace the clogged kitchen drain pipe (since he had already cut a hole in the back bedroom floor to facilitate leveling the floor (done by those floor leveling professionals)), run electric to the screened porch, fixed a second floor storm window that had been pulled down in a storm, and got the sprinkler system working to the garden.

6. Welcome a new (to us) truck to the Family

As hard as it was to say good-bye to our sweet orange truck, we knew it was time. Since we knew we’d be sitting still for a bit, we figured we’d have time not only to shop for a just the right truck, but also to outfit the new ride for life on the road. Welcome to the family, big guy!

5. Cookies, Cookies, Cookies
One of the most fun things I’ve been able to enjoy with Lara has been her Annual Cookie Baking Extravaganza. This year, like last year, was tons of fun!

4. Christmas Morning
We enjoyed the company of Katie and her parents Christmas morning, and since we had opened presents the night before, we enjoyed a leisurely and delicious Eggs Benedict Christmas Breakfast.

And just as we were recovering from THAT food coma, we headed over to Steve and Jenna’s for a wonderful Christmas Open House. Which brings me to
3. Henry and Charlie

Henry Charlie

These two sweet boys really helped ease my Missing-The-Grandkids doldrums which would creep up on me unexpectedly. Thank you, Steve and Jenna, for sharing them with us!

2. All of our Waco peeps!
Between our extended stay two years ago (remodeling Lara’s kitchen), a couple of weeks along with some weekend visits last year, and our extra-long stay this year, these good people are not just Lara’s friends – but they are ours as well.
2012-12-30_21-14-48_445-1
This was taken just last night when we had an impromptu potluck, football watching, Pit card game playing evening. It’s been so fun to get to know these young people – and we were only sad that Hugh, Jenna, Steve, John and Jennifer weren’t able to be there for the picture. We love you guys!
2a. The Housemates
PaZoogang
Although of course these guys are included in the Waco Peeps, they are also special in many other ways. They are Lara’s family here in Waco, and I treasure their love for our daughter. I also really appreciate that they never seem surprised when they open the front door and find us sitting on the sofa. Thanks for welcoming us!
1. Dear Daughter Lara
Me and my girl!
Of course the thing we love MOST about Waco, is our DD Lara .  No need to get all mushy here, but let’s face it, if it weren’t for Lara, Waco would be just an exit (or 10) on Interstate 35. We love you DD, and we already miss you!

But I confess, it did feel good to hit the road this last day of 2012 – ’cause that’s what having a house with wheels is all about, right?

Happy New Year, everyone!

The 3rd Annual Cookie Extravaganza

ChristmasCookies
Here’s the plan –

  • Contact a good number of your baking friends, invite them to spend a day of cookie baking at your house and ask them to kick in $15.00 to cover supplies.
  • Do all the shopping to make about 30 batches of cookies.

CookieStuff

  • Start making the cookie dough the night before –

cookiedough
(Having two borrowed mixers along with friends measuring out dry ingredients really helped that process!)

  • Find as many flat surfaces as you can for work surfaces and storage surfaces.

  • Come Saturday morning – let the baking begin!

  • Don’t forget to set up a “Real Food” station for when the urge for something without sugar kicks in!

  • Be prepared for even the best organization to eventually dissolve into cookie chaos!
  • But also be ready for some Bee-U-Ti-Ful end results!

  • At the end of the day, send everyone home with about 8 dozen assorted oh-so-yummy Christmas Cookies.
  • Load the dishwasher and get the next batch ready to load.
  • Collapse on the sofa and remember that the rest of the mess will still be there when you wake up!
Merry Christmas Cookies, Everyone!

A Waco Weekend

Lot’s of fun over the weekend, here in Waco! Saturday we went to the Big Game (well, big here in Baylor-land anyway!).

Baylor Bears vs Oklahoma State Cowboys

GoBears-1

OSU = Orange
Baylor = Yellow and Green
Guess you can tell where most of the “visitors” were sitting!
And it was a great game –
from the first touchdown
GoBears-2
to the final plays of the day!
GoBears-6
We all had our Baylor gear on
GoBears-5
but I think Marcus outdid us all with his Baylor Boots!
GoBears-3
Sic’em Bears!

Final Score – 41-34! Thanks, Lara, for taking us to the game – it was great!

Sunday after church we hosted a Campgound Cookout at our place! It was a fun afternoon enjoying the company of our young friends in Waco. We had a total of 17 guests, and of course the only picture I took was of people’s backs after a fair number of folks had already left.
MidwayPicnic
Man, I’m really slipping in my picture taking responsibilities!

So today, Monday, Gary is off doing some “Hire Lara’s Dad” assignments and I’m hanging around Lara’s house catching up on some computer work (hence a “hey, it hasn’t been a week” blog post), doing laundry and waiting for UPS and the refrigerator repair guy. See, I can be useful too!

Hope all ya’all (that’s Texas talk) have a good week!

Happy Thanksgiving!

Wow! Has a full week gone by since my last post? And here we are at Thanksgiving! It’s a beautiful day here in Waco, and even though our day will be a little un-traditional, I want to wish all of you a blessed Thanksgiving! We had our little campground Thanksgiving dinner last evening, gathering around the table with Lara and her friend Michael and our friends Naomi & Jay who are camping here for a couple of days.
Thanksgiving2012-1
Not that I have any pictures of that, but trust me, it was a lovely evening and we thoroughly enjoyed the evening, sharing a meal with the twinkle lights illuminating evening! (For those of you who know Gary – he assured me those lights are NOT Christmas decorations!).
And check out the fancy table centerpiece –
Thanksgiving2012-2
thanks to the tree in the left side of the first picture!
Today, while most of you are sitting down to bountiful tables and enjoying time with friends and family, we’ll be having a nice quiet day at Lara’s house – probably catching up on the laundry. But believe me, we’re thankful for that washing machine, too! (Actually Gary will be working on one of his Waco Projects. No big surprise there, right?)

Then Friday we’ll be blessed to enjoy another Thanksgiving with some of Lara’s friends (and now our friends, too!). The rest of the holiday weekend will be spent hanging out with our friends and with Lara (and her friends!). All good!

We are grateful for many, many things, but for right now we’ll just leave it that we’re so thankful to be here in Waco, settled so nicely into our camping spot
2012-11-17_08-42-08_663
and looking forward to our time here!

Better go get that laundry together! 🙂

Do not be anxious about anything, but in everything by prayer and supplication with thanksgiving let your requests be made known to God. And the peace of God, which surpasses all understanding, will guard your hearts and your minds in Christ Jesus.

OKC in a day

Let’s face it – it’s really impossible to “do” Oklahoma City in a day.  But with some recommendations from our new friends at Oakridge and a little guidance from the Visit OKC website, we gave it our best shot!

OKC-1

After a quick stop at the downtown Chamber of Commerce, we set out for the National Cowboy Museum.
CowboyMuseum-1
For several hours we wandered through the museum, soaking in all things “Cowboy”! The museum was filled with art and artifacts and even had a great display of Hollywood’s treatment of the Western lifestyle!
CowboyMuseum-4
It was a GREAT museum – really more than we could take in in our allotted time.
Cowboy Museum
We would highly recommend this museum – especially for families. There was a whole section that was all hands-on for kids! We resisted the urge, but it looked like a lot of fun!
From there we checked out the 45th Infantry Division Museum. This was a great little museum, filled with lots of interesting nuggets of military information. It’s a free museum, and the desk was manned by a veteran who served with the 45th in Korea.
45thInfantry-3
We thoroughly enjoyed this museum, and if you’re at all interested in US military history this is a “must-see”.
45thInfantry
By this time, breakfast had certainly worn off, so it was time to track down a late lunch. We parked near Bricktown – because we were told that THAT was the place for great food! Now Bricktown had been the factory/warehouse district of OKC, and in the recent (oh, maybe 20) years has seen the development of a vibrant entertainment district, including a mile long canal. We had lunch at the Bricktown Brewery – starting with these amazing sweet potato fries with peanut sauce, bacon and banana chips.
lunch
I admit I wasn’t sure they needed the banana chips – buy, my oh my, these were good!
OK, lunch down. Yummy all the way!
Next, of course, was a lovely walk along the canal. It’s not quite the San Antonio Riverwalk, but it was very beautiful, nonetheless.

Bricktown Canal Walk
The canal walk led us to the amazing Centennial Land Run Monumentlandrun-5
OK – History review time –
OKC was established on April 22, 1889 when the prairie was filled with over 50,000 people waiting for noon and the beginning of the Great Land Run, where 2,000,000 acres of land were opened up for first-come-first-served settlers. By the end of the day, 10,000 people had settled in the OKC area, and the city was born!
This memorial is really amazing –
landrun-1
Can you find Gary among the sculpture?
LandRun
It was a stunning memorial!

After a quick trip into Bass Pro (near the memorial and where the truck was parked – we had to go in, right?)
basspro
we hopped on the free trolley (gotta love that!) and headed back downtown.
Before I get to our last stop of the day, I want to make a quick comment about the skyline of OKC.
OKC-1
See that shiny new skyscraper? That’s the Devon Tower, the newest (as in completed last month!) addition to the OKC skyline. It’s the tallest (by quite a bit it seems!)building in OKC and in OK AND in the “Plains States.” It continued to pop into pictures all day long…

We were a little intrigued with the black dot about halfway up…

And a bit closer, though also a bit fuzzier….

Window Washers?

We had purposefully waited until the end of the day for our last stop – the Oklahoma City National Memorial, which memorializes the 168 victims of the tragic bombing of the Alfred P. Murrah Federal Building in 1995.

We were so glad we waited until dusk. It was a beautiful – and sobering – monument.

That just about wraps up our Oklahoma City Day Trip. We were blessed with beautiful weather, great recommendations, and friendly trolley driver! 🙂 Our only disappointment for the day was there was so much we would have loved to have seen, but just didn’t have the time. So if someone ever says to you – “Let’s go to OKC!”, you’d better go! You’ll love it!

On another note – this has been a pretty busy week of Family Celebrations! Last Sunday was my B-I-L’s birthday.
Fitz
I won’t reveal his age, just that he’s THE OLDEST (and possibly the wisest) of the bunch! I sure do love him!

Thursday the 8th this sweet little girl –
Maddie standing
turned FIVE!!! Yikes! Here’s our little beauty standing in front of the quilt I made her for her birthday (well, I really made it just because it was her turn for a quilt, but it was nice that it coincided with the whole b-day thing!)
maddie_quilt
Judging by her outfit, I think I did OK in picking out the fabrics! She almost disappears into it!
Friday was my birthday (one year closer to SS!) which I celebrated with a lovely lunch out with our host, his daughter and my sweet hubby, a nice collection of cards, and phone calls from all my kiddos and sisters. And tomorrow, when we’re “in town” I’m going to stop at Joann’s and buy myself a brand new fancy-schmancy iron (using a 60% off coupon, of course!). Doesn’t take much to keep me happy, eh? What’s not to love about November!

Thanks for coming along on our OKC Day-trip. If you’d like to see additional pictures (including the ones in the collage), you can check them out here!
